Fried Atsuage(Tofu) with three kinds of spices
In Japan we have three kinds of TOFU.
Soft tofu, hard tofu and Atsuage. Atsuage is pre-fried tofu.
Atsuage(Tofu)
Today I made an EASY atsuage dish.
We usual eat this dish at restaurants in Japan.
My parents used to run a restaurant, so when I would always help them cook.
It's reminds me of my parent's restaurant.
This one is good with beer!!!
Her are several different ways to serve atsuage tofu when you've finished the recipe below. (except the bottom right photo above).
Here is the recipe
Ingredients
1 pack of atsuage
2 inches grated green radish or Japanese radish
2 inches grated carrot
1/2 clove grated ginger
1 stalks green onion chopped
2 tbs soy sauce
2 tbs vegetable oil
Directions
1.Put the oil in a frying pan.
Heat on medium and add the atsuage tofu. Saute both side.
2.When the tofu is done, place on a plate and add grated vegetables and green onion.
Oroshigane
I used this oroshigane (food grater)→Oroshigane
This one is a handmade oroshigane so all the spikes are slightly different.
It's a unique shredder because it actually makes the texture of the vegetables seem softer than a normal grater.
Tips!
When you use grater for finely shredding veggies...
Don't push the vegetables too hard, press lightly and make a circle.
This makes the vegetable taste a little less bitter.
When you grate vegetables they make more enzymes!
Radishes have a lot of vitamins and diastase which have cancer prevention effects.
Below is another way to eat atsuage. When you eat...add a little soy sauce on top! That's how I like to eat it.
