Handmade Vegetarian Sushi




The steps involved in making this kind of sushi take some time, but they are a great alternative for vegetarians who like the delicious mix of vinegar and soy sauce without having to worry about fish or dairy products. I made a variety of 8 kinds, but feel free to be creative and add any vegetable you like.
So, first, we have to make the Vinegar Rice:

Ingredients

1 1/2 tbs vinegar
1 tbs sugar
a pinch of salt
1 cup of freshly made rice( use a little bit less water than normal Japanese-style rice, this makes the rice a little bit harder)


Directions

1. Put the first 3 ingredients in a pot and heat it up until the sugar has dissolved.

2. Mix the rice and vinegar. Use wooden spoon or a rice scoop.

3. Use your hands to make about 2 inch, bite-size oval balls as the rice base of the sushi. You can make them one at a time as you make your sushi toppings. Cover the bowl with some plastic wrap in the meantime.

Now, the sushi rice is done!


Gunkanmaki Sushi

Tofu and Pickle style sushi is called "Gunkan maki"(軍艦巻き)
(Gunkan means warship Maki means roll. Looks like a warship so it's called Gunkan maki)

@Tofu sushi recipe

Ingredients

1/2 pack soft tofu
1 Tbsp sesame paste
1 Tbsp sugar
1 Tbsp soy sauce
about 1.5×10 inch seaweed
vinegar rice

Directions
1.Wrap the tofu in a towel and drain off water.

2.Mix the sesame paste, sugar, soy sauce in a bowl.
Add the tofu and mix well.

3. Wrap the outside of the rectangle sushi rice ball with the seaweed and put some tofu paste on top. (see photo)

@Pickles Sushi Recipe

Ingredients

Ingredients

2 inch cucumber finely chopped
1 radishes finely chopped
1/4 turnip finely chopped

Sauce
1/2 tbs soy sauce
1/2 tbs vinegar
1/2 tbs agave syrup or sugar
1 tsp finely chopped ginger (optional)


Directions

1. Put the 4 sauce ingredients in a small bowl and mix well.

2. Put the vegetables in a medium bowl and pour the sauce over them. Mix well.

3. Let it sit for 20~30minutes.

4.Wrap the rectangle sushi rice ball with the seaweed and put some pickles on top.

Pepper Marinade Sushi Recipe


Ingredients
(makes 4)
1/4 large pepper(Cut lengthwise)
1/4 large green pepper(Cut lengthwise)
1 tbs olive oil
1/2 tbs vinegar
pinch of salt

Directions

1. Bake the pepper for 10~15 minutes in a toaster oven or regular oven until it is a little burnt.

2. Put the olive oil, vinegar and salt in a small bowl and mix well.

3. When the pepper is done, peel the skin and cut into rectangle shapes and mix the vinegar oil.

4. Make your rectangle rice ball with the sushi rice by hand and put the marinaded slices of pepper on top.

Celery Sushi Recipe


Ingredients
(makes 4)

1 stick celery (cut about 2 inches)
1/2 tsp salt

Directions

1. Cut a thin, rectangular piece of celery lengthwise and peel away the fibers. Then put some salt on the celery and mix by hand. Press them under a heavy bowl of water and set aside until they have gotten a bit soft.

2. When the celery is soft, rinse and drain the excess water from the celery.

3. Make your rectangle rice ball with the sushi rice by hand and put the celery on top.

Important Tip:

Don't forget to dip the sushi into a small dish of soy sauce and you can eat it by hand. Chopsticks are not necessary!
