Raw Carrot and Radish Kinpira-style

Today I made a Japanese traditional dish "Kinpira"
Kinpira (金平 きんぴら) is a Japanese cooking style that can be summarized as a technique of sauteing and simmering. It is commonly used to cook root vegetables such as carrots, burdock and/or lotus root.
So, usually kinpira dishes with veggies require cooking, as I mentioned above, but I'm trying not to lose enzymes, so I tried doing this kinpira RAW!
Raw Carrot and Radish Kinpira
Ingredients
1 small carrot sliced (check the photo below)
1 radish sliced (check the photo below)
salt
Sauce
1.5 tbs dashi soy sauce or soy sauce
1/2 tbs apple vinegar
1 tsp sesame oil
pinch of sugar
1 small chili pepper sliced
pinch of sesame seeds
Directions
1. Put some salt on the carrots and cucumbers and set aside until they get a bit soft.
2. Make the sauce. Add the 6 sauce ingredients in a medium size bowl.
3. When vegetables are soft drain any excess water from the carrot and radish then add them directly to the mixed sauce. Put it on your plate.
It's good with Japanese style rice or as a simple side salad.
