Delicious Non-Dairy Tofu Pancakes

My husband likes to eat pancakes on Sunday.
Of course my son likes to eat pancakes too.
My family's new pancakes are non-dairy which means no butter, no egg, and no white sugar!
I use tofu and sweet potatoes instead of dairy... It was really moist and delicious!
My Facebook friends wanted to know this recipe when I posted my pancake picture.
So I'll share the recipe...so easy to make!
Delicious Non Dairy Tofu Pancakes
Tofu
Have you tried tofu?
Tofu is a food made by soy beans. And pressing the resulting curds into soft white blocks.
It's easy to find at most grocery stores in the States I think.
Ingredients
(makes 12 small sized pancakes)
A↓
1 cup whole wheat flour
130g tofu (about 1/4 pack of tofu)
2 tsp baking powder
B↓
1 cup +1 tbs soy milk
3 tbs olive oil
4 tbs maple syrup or honey
C↓
4 tbs sweet potato paste(optional)
(chopped up the potatoes and boiled them for 10 minutes until they get soft, then smash them)
Sweet Potato Paste↓
Directions
1. Put the A ingredients in a large bowl, smash the tofu and mix well↓
Mix the B ingredients in a small bowl.
2.Add bowl B to bowl A, stir with spatula, before they get hard, mix well add the sweet potato paste and mix well.
3. Heat up a hot plate/griddle on medium to high heat. Spoon batter onto skilled and cook until bubbles begin to form. Flip, and cook more until golden brown on both sides.
4. Ready to eat! Try it with some organic maple syrup or some *banana jam!
*Banana Jam Topping
Simple - Just mash up 1 banana with fork!
Tips!
Asian Sweet Potatoes↓
In Japan we call this sweet potato Satsumaimo.
They are sweeter than yams. If you go to an Asian supermarket you can find them.
(Yam and Sweet potatoes are from different families)
But...even if you can't find Satsumaimo, you can make it without the sweet potatoes. Just less sweet.
