Western Cauliflower Pickles

Cauliflower


If I get fresh cauliflower I always make western style pickles.
It's easy and they last a long time!

Western Pickles


Ingredients

cauliflower
green beans
cucumber
carrot
salt( about 2 % of vegetables)

white wine vinegar or other kinds of vinegar 1 cup
water 1 cup
2~3 tbs sugar
1/2 tsp salt
1 bay leaf
2 dry chili pepper
10 hall peppers



Directions

1. Cut the vegetables and add the salt, mix together by hand and set aside until they get soft.

2. Put the liquid ingredients in a pot and heat it up and boil few minutes and cool down.

3. When the vegetables are soft drain the excess water and put them in the jar.

4. When the liquid is cool( about 50℃)add it to the jar(check the photo above)

5. Let it sit for 1~2 days.
