Smørrebrød with Apple-topped Sauerkraut

A quick and easy sauerkraut...



Ingredients

6~8 cabbage leaves sliced (1/4 to 1/2 cabbage)
1 tbs salt
1/4 tsp caraway seeds
3 tbs lemon juice
pinch of sugar
pinch of pepper
1/4 apple sliced (optional)




Directions

1. Put some salt on the cabbage and mix by the hand and then set aside until they get a bit soft.

2.When the cabbage is soft drain any excess water from the cabbage then add the lemon juice, caraway seeds, apple, sugar and pepper in a bowl and mix well. Put it on your plate.

I tried it on mini slices of rye bread this time! Great for an appetizer. Smørrebrød is a Dutch word meaning open-faced sandwich.
