Marinated Fresh Swiss Chard and Radish
Vegetarian◎Vegan◎Raw food◎Recipe
I bought some Italian Swiss Chard at a farmer's market today.
Italian Swiss Chard
The word Swiss was used to distinguish chard from French spinach varieties by 19th century seed catalog publishers. The chard is very popular among Mediterranean cooks. The first varieties have been traced back to Sicily. (From Wiki)
Today I'm introducing a marinade/dressing recipe to go on the Swiss Chard. I got this 18th century American recipe from my husband's aunt.
Ingredients
2T white wine vinegar
4T olive oil
1 clove garlic, crushed
1t cane sugar or other kind of sugar
1t paprika powder
salt and pepper
3~4cups Italian Swiss chard or other kinds of vegetables chopped
( broccoli, cauliflower, carrots, green peppers are also good...)
Directions
1. Put the all ingredients in a large, non metallic bowl and mix well.
2. Add the vegetables in the bowl and stir gently.
3. Refrigerate for at least 1 hour or over night. Drain before serving.
