Have you tried beet pickles?
They are tasty and they keep longer in the fridge!
Here is the recipe!

Fresh Beet & Beet Leaf Pickles



Ingredients

1 beet
few beet leaves
1 tbs sugar
2 tbs lemon juice

Directions

1. Add the beet, water, pinch of salt in a sauce pan and boil for 20 minutes until beet is tender.

2. When beet is cool peel the skin and slice.

3. Chop the beet leaves, add 1/2 tbs of salt, mash by hand for 1 minutes and let it sit for 10 minutes.

4. When the beet leaves are soft, rinse and drain the excess water.

5. Put the beet and beet leaves in a Tupperware container, add the sugar, lemon juice and marinade.

6. Let sit them in the fridge for few hours or over night.
