Japanese Style Quick Pickles
My grandma used to make pickles every year.
She would make a huge amount at one time and they took 3~4 weeks before they were ready to eat. She would keep many jars and slowly eat them over the year. They were really delicious.
Pickles have a lot of enzymes and help you fight fatigue. They also lower blood pressure and enhance the absorption of calcium action...Pickles are really good for you in so many ways!
Today I made a quick version pickles.
It takes 15 minutes.
Ingredients
1/3 cucumber chopped
1 carrot chopped
1 radish chopped
1 tsp salt
1 inch ginger sliced
2 tbs vinegar
1 tbs agave syrup or sugar
1 chili pepper chopped
Directions
1. Put the cucumber, carrot, radish and salt in a plastic bag. Mix the bag in your hands and set aside. ( If you have a straw, use it to suck the air out of the bag)(Check the photo above)
2. Add the vinegar, agave syrup(or sugar) mix in a small bowl.
3.When the vegetables start to feel a little soft from the salt, squeeze them in your hands to remove excess water into the sink.
4.Put the veggies back in the bag and combine the vegetables, vinegar(2), ginger and chili pepper, then mix well. Put them in the refrigerator and let sit for 20~3o minutes.
Once again, easy and healthy!
