Cashew Cream Dessert and Dressing!

I went to Cathy's raw food cooking class few days ago.

She made cashew cream soup. The cashews were in place of dairy!

It was so delicious!!

So recently I'm into cashew nut recipe ideas :)

But, I have to be careful...cashews have a lot of fat too...

They are easy to digest and are nutritious though!

So it's good for your diet or for a kids snack as well.

First I made this cashew cream...I used it for dessert and dressing!

Cashew Cream

Ingredients

1 cup (raw) cashew nuts

1/2 cup water

1 tbs~ syrup

pinch of salt

Directions

1. Soak the cashew overnight, rinse and drain water.

2. Add all ingredients in the blender and mix well.

3.And keep in the refrigerator. If you don't use soon you can put it in a freezer.

Strawberry Mousse

(makes 2 people/ 5minutes)

Ingredients

4~6 strawberries

2 tbs cashew cream

Directions

1. Add the strawberries in the blender and mix well.

2.Pour the strawberries and cashew cream in a bowl and mix well

3.Pour the mousse in your cup and add some sliced strawberry on top!

Strawberry Mousse

Banana Sundae!

(makes 2 people/5minutes)

Ingredients

1 ripe banana sliced

2 date chopped

2~4 tbs cashew cream

Directions

1. Place the banana on your cup and add some cashew cream and date!

Banana Sundae

Creamy Dressing

(makes 2 people/ 5minutes)

Ingredients

1-1/2 tbs cashew cream

1/2 tbs mustard

1-1/2 tbs vinegar

1 tbs oil

salt and pepper

Directions

1. Add the all ingredients in a small bowl and mix well.

2. Pour the dressing on your vegetables before you eat!

*I used baby lettuce and carrots.
