Cabbage【Vegetable Encyclopedia】
When you go to a supermarket how do you choose delicious vegetables?
Here is what I recommend for choosing a good cabbage...
Cabbage
【Best season】
We can buy a good cabbage year round.
Spring cabbage →March to May
Summer Cabbage→July to August
Winter Cabbage→January to March
Spring cabbage has soft leaves.
Winter cabbage has hard leaves.
winter cabbage
【Qualities to look for】
Tight, heavy and shiny outer leaves.
Of course, avoid any brown.
【Storage】
Make a hole that reaches the core with a sharp knife
or cut the cabbage in half (See pic)
Wet a paper towel moderately and stick it in the hole.
Then wrap cabbage and place in refrigerator
(best if the paper towel is facing up in the fridge).
It should last a few weeks if you do this.
You can also cut the cabbage into 1 inch cubes and
place the pieces in a Ziplock bag.
It stays fresh for up to 1 week.
It's convenient to cook when chopped like this.
【Before Serving】
Try soaking the cabbage in cold water for up to 1 minute.
This makes it crunchier and brings back some of the freshness.
Spring cabbage is soft, so it's good for raw dishes, like salads.
Winter cabbage is hard, so it's good for steamed or boiled dishes.
【Mix with 】
Cabbage + Carrot + Spinach→ good for preventing colds
Cabbage + lemon +orange→ good for your skin
【Health Benefits】
Calcium, Carotene, Vitamin K, Vitamin U, Vitamin C
(The green leaves of a cabbage have a lot of carotene and the leaves around core have a lot of vitamin C.)
If you eat a lot of cabbage it can help improve stomach ulcers.
Vitamin C and Vitamin U will melts when you heat cabbage,
so I recommend using it when you make a raw salad or other dishes.
