Umeboshi Fried Rice


Umeboshi

Umeboshi are a Japanese traditional food. Umeboshi translates to pickled plums in English. It is said to be good for digestion, fatigue, raising metabolism and is for fighting bacteria. It's sour, salty and a little bit sweet all at the same time.



Today I made Umeboshi Fried Rice.

Here is the recipe...


The secret is in the special soy sauce
(Soy sauce - 200ml + 2 cloves of garlic (minced) + 1 tbs sesame seed)

This sauce is convenient because it keeps for a long time if kept in the refrigerator and you can use it to saute many dishes or even as a dressing.


Ingredients

1/2 red onion
1/2 onion
1/2 green pepper
4 small size umeboshi
spring onion
2 eggs
2 cups cooked rice
2 tbs secret special sauce
salt,pepper
1 tbs of vegetable oil




Directions


1.Wash and finely chop the onion, green pepper and umeboshi.
Beat the eggs with the salt and pepper.

2.Heat a frying pan and add 1 tbs oil. When the oil is hot, add the eggs, stirring , until they are lightly scrambled.

3.Gradually add the rice for a few minutes. Use a wooden spoon to break apart the rice. When the rice is heated through, move it to the front side of the pan and then add the vegetables on the other side. Then stir for a few minutes.



4. Mix together and fry for a few minutes.
Stir in the sauce as desire as you mix together.


5.Turn off the heat, add the umeboshi, mix well and add some pepper.
