Courgette and Spinach Balls Pasta

I love this pasta dish; it is a favourite of mine whenever I go to Carluccios so I could not wait to try and recreate it at home.
Courgettes are also a great early summer vegetable; this has simple flavours but taste delicious.
I even managed to convince Mr S to have vegetarian food for one evening which is a big win since he is a protein lover.

Although it looks like a lot of steps it and processes once you chop everything up the actually cooking part only takes 10/15 minutes for the dish to come together.

Serves 2

Ingredients

Spinach Balls
250g Spinach leaves
1 Egg
1 Garlic Clove finely chopped
30g Breadcrumbs
40g Parmesan
¼ tsp Red Chilli Flakes
Salt and Pepper
3 tbsp. Oil
Pasta
250g Paccheri Pasta (Large tube shaped pasta)
6 tbsp. Olive Oil15g Butter
2 Garlic Cloves finely chopped
1 Red Chilli
2 Courgettes grated
60g Parmesan
Salt and Pepper

Saucepan
Strainer
Grater

Steps

1.Bring a large pan of water to the boil and add spinach to blanch for 2 minutes, remove and place into a bowl of cold water
2.Using a strainer squeeze as much water as you can out of the spinach then chop finely
3.To the chopped spinach, add the garlic clove, breadcrumbs, parmesan, chilli flakes, salt and pepper

4.Combine and form into small balls

5.Heat oil in a pan, add the balls and cook on a medium heat until browned all over

6.Place on a baking tray into a warm oven (160 degrees) whilst you make the pasta, last time I only managed to get up to this step before being having to stop and do something baby related(feed/change/play etc) so I left the spinach balls to cool and just reheated in the oven a few hours later when I got a chance to finish cooking dinner and they turned out fine. 



7.In a large saucepan bring salted water to the boil and add pasta to cook for 10-12 minutes
8.Heat oil, butter and add garlic, fry for 2 minutes

 9.Add chilli and courgette and fry for a further  5 minutes

10.Drain pasta add to courgette mixture along with parmesan and seasoning
11.Serve in pasta bowls topped with the spinach balls and a cheeky extra bit of parmesan just for luck
