10 minute Chirashi Sushi

Chirashi Sushi
Chirashi Sushi means fish or vegetables on rice.
This recipe is another really easy one.
It only requires using 1~2 minutes of gas and I used only 2 kinds vegetables.
Ingredients
1 carrot
1 stalk of asparagus
1 dry shiitake mushroom
salt
1 tbs vinegar
1 tbs sugar
pinch of salt
seaweed (optional)
Directions
1. Slice the carrot and asparagus 0.5mm-thick and cut 1 inch long and add some salt.(check the photo above) Soak the shiitake mushroom in hot water.
2. Add vinegar, sugar and salt in a pot and heat it up until the sugar dissolves.
When the vegetables and shiitake are soft squeeze them in your hands to remove excess water.
3. Combine the rice and vinegar(2) and mix well. Then add half of the vegetables and shiitake mushroom and mix well.
4. Place the vinegar rice on a plate and add the carrot, asparagus, shiitake mushroom and seaweed on top.
