Whole Wheat COUS COUS



I got this cous cous from Trader Joe's a few weeks ago.
Cous cous is whole durum wheat semolina. Same as past flower.
Not much to it!
I heard Couscous is a North African dish.
I don't use couscous very much...so I tried this recipe from the box.

Ingredients

1 1/4 cup dry couscous
6 tbs olive oil
1/3 cup lemon juice
1 diced tomato
1/2 diced green pepper
1/2 chopped onion
4 tbs parsley
1 diced asparagus (optional)
1 tbs coriander leaves (optional)
1 tsp consomme powder(optional)




Directions

1. Mix 1/2 cup boiling water with 1 1/4 cup dry couscous.
Add 6 tbsp of olive oil and 1/3 cup of lemon juice and stir well.

2. Cover and let sit for 5 minutes. Fluff with fork. Add the tomato, green pepper, onion, parsley, consomme powder, salt and pepper to your taste.

3. Toss lightly and put it in a refrigerator for 15 minutes.
Fluff with a fork and serve and add coriander leaves on top.

Trader Joe's recipe didn't use asparagus and consomme, but
I felt like it needed a little more flavor.
