Minestrone Soup with Mashed Potatoes

Ingredients:
1 tablespoon of chicken (you can use other type of meat)
1 teaspoon of onions
1 tablespoon of peas
1 tablespoon of chopped potatoes
1 tablespoon of chopped celery
1 baby carrot
1/2 tablespoon of tomato puree
2 medium size potatoes (for mash potatoes)
1/2 tablespoon of butter (for mash potatoes)
250ml of water or stock
a sprinkle of pepper

Procedures:

Mash potatoes
(1) Boiled or steam the potatoes till tender.
(2) Mash the potatoes together with butter and leave it aside.


Minestrone Soup
(1) Heat the oil and fry the onion till fragrant.
(2) Then add in carrot, celery and mix for 2 minutes.
(3) Add water or stock and let it simmer for 3 minutes.
(4) Add in the potatoes, peas and tomato paste.
(5) Let it boiled and then simmer till the potato is tender.
(6) Once cooked allow to cool. You can separate the ingredients and soup using a sieve if you child still not proficient in chewing. Then blend the ingredient to puree and mix back into the soup.
(7) Pour the soup over the mashed potatoes.

This recipe is suitable for lunch or dinner.

Variations:
This recipe is suitable for vegetarian babies, you don't have to add any meat and onions. Other than mashed potatoes, you can pour the soup over cooked pasta or rice.
