Fisherman Pot

Ingredients:
Fish slices
1 tablespoon of olive oil
1 teaspoon of onions
1 teaspoon of garlic
2 medium size potatoes
1 tablespoon of chopped spinach
100ml of white sauce
1 tablespoon of butter (for white sauce)
1 tablespoon of rice flour (for white sauce)
100ml of fresh full cream milk (for white sauce)

Procedures:

White Sauce:
(1) Melt the butter in a pan on low heat. Once melted add the flour and mix together for 1 to 2 minutes.
(2) Gradually add milk and continue to stir to prevent lumps. Simmer for a minute or slightly thick and set aside.

Potatoes:
(1) Boiled or steam the potatoes till tender and set a side.

Fish mixture:
(1) Fry onions and garlic in olive oil till golden and add in the fish slices and 2 tablespoon of water and stir well till the fish cook.
(2) Add in chopped spinach and mix well. Cook for another 1 to 2 minutes. Set aside.

Baking Procedure:
(1) Slice the steamed/boiled potatoes (if you have not done so) and arrange 1/2 in the base of the casserole dish.
(2) Top 1/2 of the fish mixture and spread evenly.
(3) Top it with the remaining potato slices.
(4) Finally cover it with the rest of the fish mixture.
(5) Pour the white sauce over the potatoes in the casserole dish and bake at 200 degree Celsius for 20 minutes.
