Vegetarian Kimchi Fried Rice

Today I made kimchi fried rice because I had some leftover kimchi and brown rice.
Korean food uses a lot of vegetables and spices...I love it!

Here is my easy and quick vegetarian, Korean kimchi fried rice recipe!



Ingredients
Serves 2 people

2 cups cooked brown rice
60g corn yellow bean sprouts
1/2 cup vegetarian kimchi
2 stalks green onion

1.5 tbs sesame oil
1 tbs soy sauce
salt and pepper




Directions

1. Wash and finely chop the spring onions. Then separate the green part of the onion and the white. Cut the kimchi up into 1 inch-long pieces.

2. Heat a frying pan and add 1 tbs of sesame oil. When the oil is hot, add the white part of the spring onions and saute for 1 min, add the brown rice and stir on high heat.

3.Stir-fry for a few minutes, using wooden spoon to break apart the rice.
Then add the kimchi (with the kimchi juices), saute few more minutes.

4.Stir in the soy sauce around the edge of the frying pan and saute a few minutes.

5.Turn off the fire, and add the green spring onion and 1/2 tbs sesame oil.
Add salt and pepper if you need.



Tips!!

*Leftover rice is good because it's not so sticky.
*Leftover kimchi is also good because it's a little bit sour.
*Use kimchi juices for more flavor.
*When you add the soy sauce, pour it on the side of the frying pan, not over the rice. It cooks the sauce more and brings out goods smells and flavors.
