How to make Kinpira? / Raw Kinpira and Kinpira-gobo


Have you tried “Kinpira”? Kinpira is a traditional Japanese dish, and strips of ingredients are braised with soy sauce and sugar. The most popular kinpira dish is burdock kinpira. It’s called “kinpira gobo”. But this version is raw  raw kinpira! So you don’t have to saute…easy and you can get lots of enzyms! Kinpira goes with  rice also it’s good for lunch box too!

Raw Carrot Kinpira

Ingredients

1cup of carrots (about 150g)
● 1 1/2 tbs soy sauce
●1/2 tbs sugar
●1 tsp sesame oil
●1 chopped chili pepper
sesame seeds
1/2 tsp salt

Directions

1. Cut the carrot into 1 1/2-inch-long thinly stripes, add the salt and mix well.
2.When the carrots are soft, rinse well , then drain the excess water.
3.Add the  ● ingredients in the carrots bowl and mix well.

Regular Sauteed Kinpira-gobo

Ingredients

2 burdock (about 150g)
● 1 1/2 tbs soy sauce
●1 1/2 tbs sugar
●1 tbs sake
●1 tsp sesame oil
●1 chopped chili pepper
sesame seeds


Directions

1. Cut the burdocks and carrots into 1 1/2-inch-long thinly stripes. 
2.Place the oil in a pot , and saute the burdocks, add the carrots and fry briefly.
3.Add the  ● sake, sugar and red pepper and saute for 1 minutes. Add soy sauce and fry until all the liquid is almost gone. Sprinkle on the sesame before serving.
