Cleaning with grated daikon radish or potato starch significantly improves the taste of oysters while eliminating the raw smell.

In a bowl, grate daikon (approx. 10cm per 10-15 oysters), add oysters, and gently mix.

When daikon turns gray, discard daikon, and rinse with cold water.

Place oysters in a bowl, sprinkle potato starch (1 tbsp per 10-15 oysters), and gently mix.

  • Grated daikon is the common choice for cleaning oysters because the constituent of its spicy taste, isothiocyanate, has a detoxifying effect. Potato starch works equally well in terms of cleaning and eliminating smell.
