The Obama Salad
Today I was reading a magazine at the library and I found a recipe that claims to be "The Obama's favorite salad recipe".
I thought I'd try something President Obama likes. Eat like the president!
Well, it is pretty much just your typical salad, but the dressing was really good and I added a few extras toppings to make it a little more interesting.
Ingredients
3 leaves lettuce washed and dried
1/8 cabbage shredded
1 asparagus cut into 2 inch size
1/2 avocado diced into 1/2-inch size
1/4 cucumber peeled and diced into 1/2-inch size
1/2 tomato diced into 1/2-inch size
1/4 bell pepper diced into 1/2-inch size
3 green beans cut into 1 inch size
3 tbs corn
1 tbs pecans
Dressing
1 tbs apple cider vinegar or white vinegar
1 tbs canola oil
1/2 tsp lemon juice
1/6 onion finely chopped soak salt water and drain.
salt and pepper to taste
1 tsp tarragon (optional)

Directions
1. Wash the lettuces and tear into bite-size pieces. Pan-roast the corn and green beans on a preheated saute pan with olive oil, add some salt and pepper. Set aside.
2. The dressing, combine the vinegar, lemon juice, onion in a bowl with a whisk. Slowly whisk in the oil and add salt and pepper.
3. Place the vegetables in a large mixing bowl and add pecans. Pour the dressing to slightly coat the salad. Toss lightly and serve on a plate.
