Japanese Soba Noodles

In winter we eat hot soba in a bowl of soup ( buckwheat noodles). It's called "Kake Soba" , in summer we eat cold soba. It called "Zaru Soba", or soba that you eat from a plate and dip into some sauce that tastes a little different than "kake soba". So, you can enjoy soba during all seasons.
Today I made some easy soba, in the form of a salad. In winter you can heat it up the sauce or you can enjoy a little hot and spicy sauce to warm you up. So this version is kind of a cross between the Zaru and the Kake sobas.

Japanese Soba Noodle Salad




Ingredients

1 serving of soba noodles (see first photo, one serving is one stick)
1/4 of a cucumber sliced into two inch pieces
1/4 of a carrot sliced into two inch pieces

Sauce to pour of the soba:

1 tbs soy sauce
2 tbs vinegar
1/2 tbs sesame oil
1/2 tsp sugar
1 tsp ginger grained
chili pepper powder



Directions
1. Put some salt on the carrots and cucumbers and set aside until they dry a bit.

2. Boil some water in a large pot. Add dried soba noodles in the boiling water, gently stirring noodles with chopsticks for about 3 minutes (similar to how you might boil pasta, but shorter). Turn down the heat to medium. Boil soba noodles, following the package instructions. It usually takes a couple minutes to boil soba. If it's necessary, add a little bit of cold water in the pot to prevent overflowing.

3. While the noodles are boiling, make the sauce in a medium size bowl. Drain any excess water from the cucumber and carrots then add them directly to the mixed sauce. Set aside.

2. Drain soba and cool the noodles in cold water. Gently wash noodles with hands and drain well. Add the noodles to your sauce bowl and mix well. Put the noodles on your plate and enjoy.
