Banana Muffins with Fresh Banana Jam (Vegan Friendly!)

The unfortunate, forgotten, and soon to be rotten, brown banana...


Don't throw it in your compost pile just yet. Don't put it in your freezer and turn it into an icepack...
Why not try to make some Banana Muffins!?
These were made without butter, milk, sugar, or eggs, so I thought you vegans out there might like this one!

Here is the recipe...

Ingredients
(12 cups muffins or 2.8in*6.7in*2.4(high) 2 pound pans)

1 3/4 cups flour
1 tbs baking powder
pinch of salt

90 ml (6tbs) agave syrup or honey
135 ml(9tbs) apple juice(100%)
3 tbs vegetable oil
a little vanilla
1 mashed banana





Directions

1.Grease 12 muffin cups or line with paper muffin liners.
Heat a oven 360°F

2.Mix together the flour and baking powder then set aside.

3.Beat the agave syrup, apple juice and vegetable oil in a bowl.
And add the mashed banana and mix well.

4. Add the liquid (3) bowl to the dry bowl.
Stir until dry ingredients have moistened.

5. Spoon banana muffin batter into prepared muffin cups or liners.
Bake 360°F for about 25min or until tops are lightly browned.
Cool muffins by turning them out onto rack to cool longer.

Banana Muffins with Apple juice


I recommend some fresh banana on top!
You can get some extra banana enzymes that way :)

Banana Jam Recipe
Mix 1 mashed banana, 1 tbs agave syrup(or honey), 1/2 tsp lemon juice and almond slices.

You can bake it as a loaf of banana bread as well.


I brought it to my neighbor's house. It makes a good present!

I'm glad I didn't throw away that banana!
