Novotel Hotels and Resorts Manila, located in Araneta Center in Quezon City, celebrates the upcoming Philippine Independence Day celebrations with KANYAMAN Filipino Food Festival, a modern take on Kapampangan cuisine, thanks to a collaboration with celebrity chef Sau Del Rosario, who has been famous for his advocacy of the vast cuisine in Pampanga, and more popularly known on mainstream media as one of the chef judges of MasterChef TV show in the Philippines.


The main festivities happened at the hotels flagship buffet restaurant, Food Exchange Manila, where Chef Sau's modern take on Kapampangan cuisine is featured.

The Pako Salad has prawns, salted egg, tomato, onion, and gets more texture and flavor with the addition of watermelon and kesong puti (local cheese made from carabao's milk).


The classic Chicken Galentina gets a whole new makeover with the addition of chicken sausage, chorizon, spam and peppers.


If you never tried Buro, it's basically fermented rice that you'd eat along with some steamed veggies. 


With international exposure and accolades, Chef Sau del Rosario's menu for KANYAMAN Filipino Food Festival features his modern take of Kapampangan cuisine such as - Truffled Sisig Paella, Foie Gras Sisig, Crispy Lechon Bellywith chocolate and cheese stuffing, Pancit Luglug, Pochero, Duck Adobo, brick oven baked Longanisa Pizza and a lot more certified delicacy hits.

Other event highlights also included a special fashion show by famous designer based in Pampanga Philip Torres. 



For a limited time only, the Food Exchange Manila buffet rates for KANYAMAN Filipino Food Festival is only at Php 1,200 nett on weekdays (Monday to Thursday, buffet lunch and dinner / Friday, buffet lunch) and Php 1,600 nett during weekends (Friday, buffet dinner / Saturday and Sunday, buffet lunch and dinner).
