Delicious & Easy 10 grain & Carrot Muffins

These muffins are really delicious, moist and healthy!
Ingredients
(makes 12 muffins/400°F)
A)
1 egg
1/4~1/2 cup sugar
1/3 cup oil
1/2 tsp salt
B)
1 cup whole wheat flour
1 tsp baking powder
C)
1 cup 10 grain
1 cup 100% apple juice
(soak together about 10minutes ~ 1 hour)
D)
1 cup of carrot shredded
Directions
1. Mix A) in the bowl, add B), C), D) and mix each time.
2. Pour in the muffin cups.
3.Bake for 400°F oven about 15 minutes.

I baked these muffins for my son's birthday!
He liked them. Healthier than cake with overly sweetened frosting, that is for sure :)
