Cabbage pickled salad with Yuzu

Usually I use Japanese radish with carrot pickles...
But cabbage and carrot are good too!




Cabbage Pickled salad with Yuzu


here is the recipe

ingredients

.1/8 cabbage
.1/3 carrot
.1tsp salt+1pinch of salt
.80~100ml vineger
.3Tbsp sugar
.2Tbsp Yuzu juice
.Zest of yuzu

1.Peel the carrot and cut the carrot and cabbage
into 4cm-long thin strips.

2.Put (1.) in a bowl.Sprinkle 1tsp salt on them and mix well.
(wait for 5min)
And then they have softened , squeeze out of the water.

3.Mix the vinegar, sugar, Yuzu juice and pinch of salt in a bowl.
Add the cabbage, carrot and yuzu zest and mix together.

*If you don't have a Yuzu you can use lemon.
